Uji (宇治) has been producing tea since the 13th century – longer than any other region in Japan. Wazuka, forty minutes further into the hills, produces around a third of all Uji-brand tea. Its stepped hillside fields – carefully shaded, misty in the early morning – are among the most beautiful agricultural landscapes in Japan and almost completely unknown to foreign visitors.
